1 small onion, finely chopped (1/4 cup)
2 tablespoons olive oil
2 tablespoons fresh or 2 tsp dried rosemary
1 teaspoon chopped fresh or 1/4 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon pepper
- Heat oven to 450, grease bottom of a jelly roll pan with olive oil
- Dice potatoes into 1 inch pieces
- Toss all the ingredients in a bowl
- Spread in a single layer and bake uncovered 20-25 minutes, stirring occasionally
i dropped some rosemary while i was chopping, cleo was unimpressed.
probably because i usually drop something she's never had before, not something she can find in the yard :)
but i digress. here they are, ready for the oven!
i forgot to take an after picture, i was too excited to eat them :)
